Spiced Beef

  • 1 1/2 Kg (3 1/4 Lbs) of O’Driscoll’s Award Winning Spiced Beef
  • Small bottle of Guinness
  • Carrot, Onion, pepper, bay leaf

Put the meat into a pot, add the carrot, (whole) onion, pepper and bay leaf and cover it (barely) with cold water.
Put a tight lid on the pan and bring it to the boil.
Immediately reduce the heat to a very gentle simmer and cook for about 2 1/2 to 3 hours.
With about an hour to go, pour the Guinness into the pot.

When the meat has finished cooking, let it cool in the liquid. Take it out, wrap in foil, and keep refrigerated until required. It will keep for about a week. spiced-beef-3

When you’re serving it, slice it very thinly and serve with your favourite bread.
